Tater Tot Chicken Pot Pie

Tater tot chicken pot pie is all the flavor of a traditional chicken pot pie but topped with crispy tater tots. If you are like me, you love chicken pot pie but rarely make it because you don’t always have time to make a pie crust. Adding tater tots makes for an easy alternative to a traditional chicken pot pie without losing the flavor.  This makes for a great weeknight meal because you can prep and make this meal in under an hour.

This is a great meal to make on a cold fall or winter night that the whole family will rave about. This can be made ahead of time to make weeknight dinner time even faster. I like to cook this in a 10-inch cast iron skillet but if you don’t have a cast iron skillet, use a 9-inch square baking dish.

Tater Tot Chicken Pot Pie

Ingredients
  • 2 Cups cooked Chicken, cubed
  • 2 Cups frozen mixed vegetables
  • corn, carrots, peas and green beans
  • 1-10.5oz can cream of chicken soup
  • 1/4 Cup milk
  • 1 tsp dried minced onion
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 1-28oz bag frozen tater tots (use about 3/4 of bag)
Directions
  • Step 1 Preheat oven to 400°
  • Step 2 In a large bowl, mixed together chicken, frozen vegetables, cream of chicken soup, milk, thyme, onion, garlic powder and salt and pepper. Stir until combined.
  • Step 3 Add chicken mixture to a 10-inch round cast iron skillet or a 9-inch square baking dish and spread out evenly.
  • Step 4 Cover the top of the mixture with frozen tater tots.
  • Step 5 Bake for 40 minutes or until tater tots are golden brown and bubbly.
