Onion and Ham Scalloped Potatoes

Ingredients
- 3 1/2 cups milk
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 1 packet (2-ounces) Lipton onion soup and dip mix
- 8 oz sour cream
- 5 large red potatoes, sliced into 1/8 to 1/4 inch thick rounds
- 2 cups cooked ham, diced
- 2 cups shredded Colby jack cheese
- 1 cup shredded parmesan cheese
- salt and pepper
Directions
- Step 1 Preheat oven to 400°F. Lightly grease a 12-inch cast iron skillet or 9×13 inch baking dish. Set aside.
- Step 2 In a large sauce pan, melt butter over medium heat. Once melted whisk flour until combined and cook for 1-2 minutes to remove the flour taste.
- Step 3 Slowly whisk milk into the butter and flour. Cook over medium low heat until it thickened to a thin gravy, about 5 minutes, stirring frequently.
- Step 4 Stir in Lipton onion soup and dip mix.
- Step 5 Remove from heat and add sour cream, stir until combined.
- Step 6 Arrange half of the potatoes in the skillet or dish. Pour half the gravy on top of the potatoes. Sprinkle 1 cup of ham , 1 cup of cheese and 1/2 cup parmesan cheese over the gravy. Season with salt and pepper. Repeat the layers once more.
- Step 7 Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20 minutes or until potatoes are soft and the cheese is slightly golden brown.
- Step 8 Cool for 10 minutes before serving.
