You can top these with the traditional butter and maple syrup or you can change it up with fresh fruit, jam, peanut butter or chocolate hazelnut spread. This will make breakfast fun and special.
Buttermilk Waffles
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup sugar
- 2 eggs, separated
- 2 1/4 cups buttermilk
- 1/2 cup avocado oil
- 1 teaspoon vanilla extract
Directions
- Step 1 Preheat waffle iron according to manufactures instructions and spray waffle iron with cooking spray.
- Step 2 In a medium bowl, mix flour, baking powder, baking soda and salt. Set aside.
- Step 3 In a medium bowl, beat egg whites with an electric mixture until stiff peaks form. Set aside.
- Step 4 In a large bowl, beat egg yolk with a whisk. Add in sugar, buttermilk, oil and vanilla extract, whisk until combined. Add flour mixture and stir until large lumps disappear and are worked into the batter, small clump will still be in the batter.
- Step 5 Fold in the egg whites into batter.
- Step 6 Pour 1 cup of batter (or amount recommended by waffle iron manufacture) evenly onto preheated waffle iron. Close lid and cook until golden brown.
- Step 7 Serve with butter and maple syrup.
