Lemon Poppy Seed Donuts

Lemon Poppy Seed Donuts are perfectly lemony and sweet, this makes for a perfect breakfast for busy week days. The family will love this twist on a lemon poppy seed muffin, the donut makes for the perfect serving size.

This lemon poppy seed donut is soft and moist in the inside with a hit of lemon flavor. The glaze on top really add a prefect amount of sweetness and lemon flavor to really make a perfect combination.

This recipe comes together in no time, first add all the dry ingredients to a large bowl and stir to combine. Secondly, add the wet ingredients by making a well in center of dry ingredients, and whisk until just combined. Make sure you don’t over mix, over mixing can make for a more dense donut.

Making the glaze only needs 3 ingredients, confectioner’s sugar, lemon juice and milk. Add sugar and lemon juice to a medium bowl and whisk, you will need to add about 1-2 tablespoons of milk to thin out the glaze. You will want the glaze thin enough to easy drip the donut tops into the mixture. If the glaze becomes to thin, add more confectioner’s sugar to help thick up the glaze to your desired consistency.

Ingredients
  • Donuts:
  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp poppy seeds
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 2 eggs
  • 1/4 cup oil
  • 1 tsp vanilla extract
  • Zest and juice of 1 large lemon
  • Lemon Glaze:
  • 1 cup confectioner's sugar
  • 1 tbsp lemon juice
  • Milk for thinning (1 to 2 tablespoons)
Directions
  • Step 1 Preheat oven to 350°F. Grease donut mold with non-stick cooking spray.
  • Step 2 In a large bowl, stir together flour, sugar, poppy seeds, baking soda and salt. Add all the wet ingredient, milk, eggs, oil, vanilla extract and lemon zest and juice. Whisk until combined, making sure not to over mix.
  • Step 3 Fill donut molds with batter to the top. Bake for 11-13 minutes, or until donuts spring back when touched.
  • Step 4 Cool in pan for a few minutes, and then remove from pan and let cool on cooling rack, cool completely before dipping into lemon glaze.
  • Step 5 Lemon Glaze: Whisk together confectioner’s sugar and lemon juice, add about 1 tablespoon of milk and whisk until combined. If the glaze is to thick, add a little more milk to thin out.
  • Step 6 Once donuts have cooled completely, dip top into glaze and transfer to parchment paper.
  • Step 7 Serve immediately or store in an air tight container for up to four days.
