This banana bread is perfectly balance with the right amount of banana flavor with not being to sweet. This is a great option for a quick breakfast for the week or make on the week to enjoy at brunch. Banana bread is best served warm with a little butter on top.

Ingredients
- 8 tablespoons (1 stick) butter, melted and cooled
- 1 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 very ripe bananas, mashed
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
Directions
- Step 1 Preheat oven to 325°F. Spray 3 – 6inx3in mini loaf pans with non stick cooking spray.
- Step 2 In a stand mixer fitted with the paddle attachment (or large bowl with a handheld electric mixer), add butter, light brown sugar, eggs, and vanilla, beat until well combined.
- Step 3 Add mashed bananas to mixer and beat until combined.
- Step 4 In a separate bowl, whisk flour, baking soda, baking powder and salt.
- Step 5 add dry ingredients to the wet ingredients and mix until combined. If using walnuts, add until combined.
- Step 6 Evenly pour batter into mini loaf pans
- Step 7 Bake for 40 to 45 minutes or until tooth pick inserted into center comes out clean.
- Step 8 Let the bread cool slightly in pan on wire rack. Slice and serve warm with butter.
- Step 9 When completely cooled, cover the pan with foil or wrap loafs with foil. Store at room temperature for up to 3 days.
