This banana bread is perfectly balance with the right amount of banana flavor with not being to sweet. This is a great option for a quick breakfast for the week or make on the week to enjoy at brunch. Banana bread is best served warm with a little butter on top.

Ingredients
  • 8 tablespoons (1 stick) butter, melted and cooled
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 very ripe bananas, mashed
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional)
Directions
  • Step 1 Preheat oven to 325°F. Spray 3 – 6inx3in mini loaf pans with non stick cooking spray.
  • Step 2 In a stand mixer fitted with the paddle attachment (or large bowl with a handheld electric mixer), add butter, light brown sugar, eggs, and vanilla, beat until well combined.
  • Step 3 Add mashed bananas to mixer and beat until combined.
  • Step 4 In a separate bowl, whisk flour, baking soda, baking powder and salt.
  • Step 5 add dry ingredients to the wet ingredients and mix until combined. If using walnuts, add until combined.
  • Step 6 Evenly pour batter into mini loaf pans
  • Step 7 Bake for 40 to 45 minutes or until tooth pick inserted into center comes out clean.
  • Step 8 Let the bread cool slightly in pan on wire rack. Slice and serve warm with butter.
  • Step 9 When completely cooled, cover the pan with foil or wrap loafs with foil. Store at room temperature for up to 3 days.
