Campfire Beef Stroganoff
One pot campfire beef stroganoff
Ingredients
- 1 lb ground beef
- 1/4 cup white onion, chopped
- 2 cloves garlic, minced
- 1 pint white mushrooms, sliced
- 1 lb noodles, any shape
- 32 oz beef broth
- 8 oz cream cheese
- 1 TBSP olive oil
- 1 tsp dried thyme
- salt and pepper
Directions
- Step 1 In a cast iron Dutch oven or 12 in cast iron skillet, add olive oil to pan. Place Dutch oven or skillet over campfire or on stove top. Heat oil and added ground beef, onion and mushrooms.
- Step 2 Cook ground beef until brown, drain oil
- Step 3 Add minced garlic and cook about a minute, make sure not to burn.
- Step 4 Add noodles, beef broth and thyme and stir. Cover and stir every 10 minutes until pasta is cooked. It will take about 30 minutes depending on how hot the fire is, I like to have it about 400° or over medium heat if cooking on the stove.
- Step 5 Add cream cheese and stir until melted and combined with pasta.
- Step 6 Season with salt and pepper to taste.
