Chewy Gingersnap Cookies are a prefect soft cookie with flavor notes of molasses, cinnamon, ginger and clove. Its a prefect Christmas cookie to make and share with friends and family.
Chewy Gingersnap Cookies

Ingredients
- 3/4 cup butter (1 1/2 sticks), softened
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 2 1/4 cup all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground clove
- 1/4 teaspoon salt
- granulated sugar for rolling
- 1-12oz bag of white chocolate chips
- 1 teaspoon shortening
Directions
- Step 1 Preheat oven to 375°F
- Step 2 In a stand mixer fitted with the paddle attachment,cream butter and brown sugar until light and fluffy. Add egg and molasses and mix until combined.
- Step 3 In a large bowl, mix flour, baking soda, cinnamon, ginger, clove and salt.
- Step 4 Slowly add dry ingredients to the wet. Mix on medium low until combined.
- Step 5 Add sugar into a small bowl- about 1/4 cup
- Step 6 Roll dough into 1 inch balls and roll into sugar. Place on cookie sheet.
- Step 7 Bake for 8-10 minutes. Cool completely.
- Step 8 In a medium bowl, melt white chocolate chips in microwave. Go slowly, stirring after every 30 seconds. Add shortening and stir until smooth. Dip half of cookie into melted white chocolate and place on parchment paper to set and cool the chocolate.
