Chicken Florentine
Ingredients
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breast
- 1 teaspoon ground black pepper
- 2 1/2 teaspoons kosher salt
- 1/2 cup all-purpose flour
- 2 tablespoons unsalted butter
- 2 large shallots (about1/2 cup), minced
- 3 large garlic cloves. minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 tablespoon dry parsley flakes
- pinch of red pepper flakes, optional
- 1/2 medium lemon, juiced
Directions
- Step 1 In a large skillet, heat olive oil over medium heat. Sprinkle chicken with salt and pepper. Dredge chicken in flour and shake off excess. Place the chicken in the skillet and cook about 6-8 minutes per side, flipping only once, until golden brown on both side and an instant read thermometer reads 165°F. Remove chicken from skillet and place on plate and set aside.
- Step 2 In the same skillet, melt butter and add shallots and garlic. Saute until soften, about 2 minutes. Add the chicken broth, scraping any brown bits off the bottom of the skillet. Let simmer until the liquid has reduced by half, about 10 minutes. Add the heavy cream and cook for 5-7minutes or until the mixture coats the back of a spoon, stirring frequently. Stir in lemon juice, parsley flakes and red pepper flakes. Remove from heat.
- Step 3 Cut chicken against the grain into diagonal strips and return to pan.
- Step 4 serve with green beans.
