Chicken wild rice soup is a thick and creamy soup with lots of shredded chicken and Minnesota grown wild rice. This is a great soup to make for cold fall and winter days.
Chicken Wild Rice Soup

Ingredients
- 1 pound chicken breast, shredded
- 3/4 cup wild riced
- 32oz chicken stock
- 1 bay leaf
- 1 cup carrots, diced
- 1/2 cup celery, diced
- 2 medium red potatoes, diced
- 1 pint of mushrooms, diced
- 1/2 medium white onion, diced
- 2 cloves of garlic, pressed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup heavy cream
- optional
- shredded cheese
- bacon
Directions
- Step 1 Add 3/4 cups wild rice to pan and cook according to the directions on package
- Step 2 Add the chicken breast, chicken stock, bay leaf and salt and pepper to slow cooker.
- Step 3 Dice the potatoes, carrots, celery and onion and add to slow cooker
- Step 4 With a garlic press or finely mince the garlic and add to slow cooker
- Step 5 Once wild rice is cooked add to slow cooker
- Step 6 Cook on low for 6 hour
- Step 7 Remove chicken and shred, add back to slow cooker
- Step 8 Before serving add heavy cream
- Step 9 optional top with shredded cheese and bacon
