Crock-Pot Chicken and Dumplings is a comfort food staple, it is loaded with chicken and vegetable in a creamy sauce and topped with lots of homemade biscuits.

This chicken and dumplings recipe is so easy to make because you add all the ingredients into crock-pot, it is such a hearthy and comforting meal.

The homemade biscuits are so quick and easy to make, add all the ingredients to a bowl and mix until it looks like a wet dough. Spoon the dough ont top of cooked chicken and vegatables, you may need to stir slighly to add all the dollops of dough into crockpot. If you don’t want to make your own dough for the biscuits, use a refrigated can of dough and cut eat biscuit dough in quarters.

Ingredients
  • 1 pound chicken thighs
  • 1/2 cup white onion, chopped
  • 3 cloves garlic, minced
  • 1/3 cup carrots, diced
  • 1/3 cup frozen corn
  • 2 medium red potatoes, diced
  • 1/4 cup mushrooms, diced
  • 5 cups water
  • 5 teaspoon chicken bouillon
  • 1 teaspoon dry thyme
  • 1 teaspoon dry parsley
  • 1/4 cup frozen peas
  • 6 oz cream cheese
  • Salt and pepper
  • Biscuits
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
Directions
  • Step 1 Season chicken thighs with salt and pepper, add to bottom of crock-pot.
  • Step 2 Add onions, garlic carrots, corn, potatoes, mushrooms, thyme and parsley on top of chicken.
  • Step 3 Measure 5 cups of water and stir in chicken bouillon, whisk until combined. Pour mixture over chicken and veggies. Stir all the contents in the crock-pot together.
  • Step 4 Cover and cook on high for 3-4 hours or until chicken is cooked and easy to shred.
  • Step 5 Remove chicken and shred, return back to crock-pot. Add cream cheese and peas into crock-pot and stir until combined.
  • Step 6 In a medium bowl, add ingredients for the biscuits. Stir until combined and its looks like a wet dough mixture.
  • Step 7 Spoon dollops of dough mixture on top of chicken and vegetables.
  • Step 8 Place the lid back on crock-pot and cook for 1 hour or until dough has risen and the tops look like a matte like finish.
  • Step 9 Stir cooked biscuits into chicken and vegetable mixture and adjust seasoning and serve.
