Ingredients
- 2 tablespoons unsalted butter
- 1/2 small white onion, finely chopped
- 1/2 cup carrots, diced
- 3 to 4 medium garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 1/4 cups basmati rice
- 2 1/2 cups chicken broth
Directions
- Step 1 In a medium saucepan, melt butter over medium heat. Add onion and carrots and saute until onions and carrots are soft but not brown. Add garlic, salt and pepper. Saute until garlic is fragrant.
- Step 2 Add rice and stir until well coated. Add the chicken broth and bring to boil. Cover and reduce heat to low, simmer until rice is tender and the liquid is absorbed, about 15 to 20 minutes.
